3 Ingredient Banana Pancakes

A simple, healthy comfort meal anyone can put together. These are perfect for breakfast, brunch or as a decadent snack, AND they're made up of pantry staples so you'll probably have all the ingredients at hand (if not it might be time for a grocery shop?? haha )



Use your creativity to go as wild or as tame as you'd like with the pancake toppings ! We decorated this batch with ground cinnamon, fresh chia jam and a drizzle of rice malt syrup, but the possibilities are endless. Nut butters, maple syrup, fresh fruit, stewed fruit, dairy-free yogurt, the list goes on…


Ready in 15 minutes | Yields 1-2 servings


YOU WILL NEED:

  • 1 cup of oats

  • 1 cup of soy milk

  • 1 large banana


METHOD:

  1. Blend the oats, soy milk and banana until a smooth batter is formed.

  2. Pour batter into a heated pan, forming pancakes of the size you desire. Flip once bubbles start to form near the middle of your pancake. When enough bubbles have formed, the pancakes shouldn't stick to the pan at all!

  3. Cook for another minute (or until the other side doesn’t stick) and your golden pancakes should be ready to plate and decorate.

This recipe makes approximately 4-5 medium sized pancakes. If you're making serves for multiple people, I'd recommend making multiple batches so everyone gets their pancake fill :)
